How long does App Store review take right now?

Where do these numbers come from?
Every developer using ASO Studio Connect on iPhone reports, anonymously, when their versions change status in App Store Connect. Only the timings are pooled: never app names, never metrics, never anything that identifies an account.
What is the difference between waiting and in review?
Waiting for Review is the queue: the build is submitted and nobody has opened it yet. In Review is the time a reviewer is working on it. The total is submitted to approved.
